Cibo (alternate words: Comida, Nourriture, Food)

Welcome to Cibo, in Italian, simply meaning 'food'.

Cibo, Food for Life, is a diatribe about food, life, and the love, nourishment, and trials we encounter day to day... with some special antidotes to those trying times, in the form of nourishing words, recipes, or simply expressions of the moment. Decadent, gluttonous, or rustically simple.

The Mysticism in a Circular Bite

I have come to realize that a huge part of my love affair with food comes from the aesthetic presentation- the visual canvas that is laid before me.  I'd say that presentation is one of my weakest culinary attributes, so much so that I am hoping to refine this minimal ability through culinary school, but it is true that my first impression of a coveted meal is its presence in the dish laid out before me.   If it's simply heinously presented, I pretty much lose my appetite.  Read stewed, overboiled vegetables- I don't care how good they might be for me, I have no desire.  I'd rather eat a bunch of spinach raw.

Anyhow, digression again.  in the world of sacred geometry, in the mystic religious texts around the world, in art classes and kindergarten classes alike, conversations abound about the beauty of the circle.  I couldn't agree more- especially when the circle is the shape in which delectable foods are presented.
Quite unintentionally, I recently celebrated my love of the circle, with dearest friends-family.   We planned on testing various traditional recipes of mine, refining them, and celebrating a glorious feast.  Thus with all the ingredients in hand and five hours in the kitchen, it dawned on me that I had created a lineup of dishes that all revolved around the circle.   The only exception was the fried smelts we prepared (though they were served with circular lemon slices and halved cherry tomatoes).

ZUPPA/ANTIPASTO:
Screppelle- Italian crepes ready for a rich chicken broth.

My Godson Mikey rolling crepes filled with grated parmesan
cheese.

PRIMI:
Rolling out dough for dishtowel pasta- "Pasta con lu sparone"

Pasta con lu sparone with ground meat, veggie, and cheese filling.

DOLCE:
Zeppole, baked, not fried... and later stuffed with crema pasticcera (pastry cream) and black amarena cherry syrup.  Yum!

Final product... and decadent end to our meal.  Dessert:  Zeppole
